I like that this conforms not just to having a volta and a seasonal word (harvest, or perhaps apples), but also to five-seven-five---now if only you rhymed, as the one book on Japanese haiku I've read was wont to translate its examples.

That said, the volta feels....weak. It's completely expected by the end, so that that one word, "sour", isn't concrete enough to add to the rest of the piece. At the same time, there are a few redundancies. You could maybe cut "people", you can definitely cut "in harvest", you could maybe also cut "want"....Reducing each line by one syllable, for example:

The colour-blind
pick apples for sweetness:
puckered faces.

In intensive critique, I'd class this as senryu rather than haiku - there is a seasonal reference, but the poem deals with people's foibles rather than nature.

The first line sets the scene well enough, but perhaps "people" could be replaced with a more specific word to add  depth - "women," perhaps.

Second line:  choosing, not recovering windfalls (which would more or less automatically be at least ripe).  Since senryu doesn't require a seasonal reference, this line could fill in the picture - 'from ladders" instead of 'in harvest," for example.  Or choke up on the bat a bit with "want sweetness."

With sweetness covered in the second line, the abrupt turn can be enhanced - "and crunch:  bitterness."

Not intended as a rewrite, only examples of possible improvements.  Accepting that it's senryu, words which also apply to emotions become useful.
