Anyone can be an artist if they're good at what they do... Surgeons certainly consider their work to be an art.

I also considered archeologist. Ha! I was trying to come up with a specific job title for someone who restores old documents, who pieces together bits of papyrus fragments. I think this is a fair word to consider as well.

But, I had no distaste for "artist" either. I wasn't a fan of "conductor" so much, because my mind went first to train conductor, and I got derailed.

Each choice is defensible. It comes down to a subjective feel of what works best. Once you've allowed for reversing time she can resemble any profession you (the speaker) likes really.

To the train conductor thing yeah that's why it needed medley. Which weighs it down a little though plays off the food to an extent.
