There are groups online
who promise the moon
indeed is made of cheese,
and infinite others
that insist biology
has gone the way of Pluto.
The alchemy unfolds
in real time
and all bets are closed.

Trust the Science The title makes a declaration which the poem will attempt to substantiate... I guess

has gone the way of Pluto. I get that Pluto has been "demoted", yet comparing the science of biology to planetary science misses the mark here, I'm afraid. Still, I get the point.
The alchemy unfolds I interpret alchemy as being a mostly unscientific, "magical" process of tranformation. I do believe that "armchair scientists" are too willing to express opinions, yet unwilling to undertake the arduous process of providing evidence: it's the old saw that "extraordinary claims require extraordinary evidence." It's much easier to spout, or repeat nonsense, than it is to actually do the hard work: if uncle John says that aliens kidnapped his son, then it must be true, because he'd never just leave. And the "proof" is that he doesn't even know how to drive.

This piece is a mildly interesting observation, yet it could stand to pack more of a punch.

I don't understand much about the last line nor the beginning, if you could show more clarity about them, it would be a great piece. Thanks for sharing.

I take this to be an indictment of medical science (or at least people's opinion of it) in the current pandemic.
but I find the arguments, even though ironic, as being a bit over the top.
the basic science is not in doubt, so the second strophe is misplaced.
i could have missed the point, however.

Thanks for reading and commenting guys. I suppose I might have posted this in "fun" as it is not really a polished piece. This was not meant as an indictment of science, but an indictment of the mindset that picks and chooses which science is convenient. Here in Canada, "trust the science" has become a sort of mantra that most of us believe in to a high degree. Our problem here is that our leaders are playing fast and loose with the science to cover their own failures. The alchemy is that the solid science is degraded by agendas. Millions of Canadians have received the first shot of the AZ vaccine and 4 months later will be getting Pfizer for a second shot. We went from trusting the science to trusting the politicians. This short poem was born out of those frustrations.
